Easy Filled Peppers With Ground Beef Egg and Rice in Pan

Stuffed bell peppers are a healthy meal made with tasty ground beef and brown rice. These easy stuffed bell peppers are cooked with lean ground beef, sausage, turkey, chicken, cheese, and or vegetarian ingredients, to make them delicious.

Today, I'm showing you how to make easy stuffed bell peppers with ground beef only.

We're gonna stuff some bell peppers with a mixture of ground beef, rice, tomatoes, and corn, for an easy dinner, the whole family will love it.

Easy Stuffed Bell Peppers with Ground Beef

Start by preheating your oven to 350 degrees Fahrenheit and lightly grease a 9×13 baking dish.

You'll need 6 bell peppers for this recipe of any color.

Today, I am going to use red and green but you can also use yellow and gold ones as well.

Ideally, you want bell peppers that can stand up straight and don't lean, but if that's all you can find here's a trick. you can trim off the bottom to even things up but save those little pieces. Then we're going to trim off the top to open things up, cut out all of the membranes inside and remove all the seeds.

You can see we're left with little holes in here from removing the bottom. You just take the little pieces that you cut out and use them to stuff inside and plug the hole. Place these into your prepared 9×13 pan.

If you like your bell peppers to be tender-crisp then you can just leave these until your stuffing is ready, but if you like your bell peppers to be on the much softer side you can pre-bake these in the 350-degree oven for 10-15 minutes.

This just so happens to be about the same amount of time that it'll take to put together our stuffing.

Add 1 pound of lean ground beef to a large skillet over medium-high heat.

Add in 1 white diced onion, and we're gonna sauté this for about 5-7 minutes.

You're just looking for the onions to soften up a bit and the meat to brown because it can finish cooking in the oven.

Drain off any excess liquid or grease and then add in 3 cloves of minced garlic, and sauté for about 60-90 seconds.

Then remove the skillet from the heat and we're going to stir in a 15 ounce can of drained diced tomatoes, 1 cup of frozen corn,

and 1 cup of cooked white rice,and you can just use leftovers for this, or an instant rice, or cook some up especially for this.

We're gonna flavor this with 1 tablespoon of Worcestershire sauce, and season with 1 1/2 teaspoons of salt, and 1/2 teaspoon of black pepper.

Last we'll add in 1 cup of shredded pepper jack cheese.

Stir this together until everything is fairly evenly distributed, and then carefully spoon this mixture into each of our prepared bell peppers.

Finish these off by topping with a little bit more of that shredded pepper jack cheese.

Depending on the size of your bell peppers you may or may not have any leftover filling. If you do have leftovers just remember that you can only eat them if you cook the ground beef all the way through.

Now we can return these to the oven, or put them in the oven for the first time, and bake at 350 degrees for 30 minutes.

After 30 minutes your bell peppers should be tender-crisp, or a little extra tender and the cheese on top should be bubbling and browned. Then your tasty stuffed bell peppers with ground meat is ready to eat!

How to Make Stuffed Peppers?

Ingredients

  • 6 whole bell peppers, any color
  • ¾ – 1 pound lean ground beef
  • 1 cup frozen corn
  • 1 cup cooked white rice
  • 1 white onion, diced
  • 3 cloves garlic, minced
  • ½ teaspoon black pepper
  • 1 (15 ounce) can diced tomatoes, drained
  • 1 ½ cups shredded pepper jack cheese
  • 1 tablespoon Worcestershire sauce
  • 1 ½ teaspoon salt

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. Grease a 9×13 pan lightly.
  • Remove the seeds and membrane from the inside of each bell pepper by trimming the tops off. Place the bell peppers in the pan that has been prepared.
  • Cook ground beef and onion in a large skillet over medium-high heat until browned. Any extra fat or water should be drained. Cook for another minute after adding the garlic.
  • Remove from the heat and add the tomatoes, cooked rice, corn, Worcestershire sauce, salt, and pepper, as well as 1 cup pepper jack cheese.
  • Fill bell peppers halfway with the mixture. Over the top, sprinkle the remaining cheese.
  • Preheat the oven to 350°F and bake for 30 minutes, or until the cheese is bubbling and golden.
